Ingredients

  • 10 cups Popped popcorn
  • 1 cup Unsalted butter
  • 2 cups Brown sugar
  • ½ cup Corn syrup
  • 1 teaspoon Salt
  • ½ teaspoon Baking soda
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.
  2. In a saucepan, melt butter over medium heat. Stir in brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil without stirring for 4-5 minutes.
  3. Remove from heat and stir in baking soda and vanilla extract.
  4. Pour caramel mixture over popcorn in a large mixing bowl. Stir to coat evenly.
  5. Spread popcorn onto the prepared baking sheet. Bake for 30 minutes, stirring every 10 minutes.
  6. Remove from oven and let cool completely before breaking into pieces.
