Ingredients

  • 2 large zucchini spiralized into noodles
  • 1 cup cherry tomatoes halved
  • 1 cup mozzarella balls halved
  • 1 handful fresh basil leaves torn
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • to taste salt and pepper

Instructions 

  1. 1. Spiralize the zucchini into noodles and place them in a mixing bowl.
  2. 2. Add the halved cherry tomatoes, mozzarella balls, and torn basil leaves to the bowl.
  3. 3. Drizzle the olive oil and balsamic vinegar over the salad.
  4. 4. Season with salt and pepper to taste, then toss everything together until well combined.
  5. 5. Serve immediately or chill in the fridge for 10 minutes before serving.
