Caprese Sandwich With Olive Pesto Recipe

Ingredients 

Main Ingredients

  • 4 slices Bread preferably ciabatta
  • 1 cup Fresh Basil Leaves
  • ½ cup Pitted Black Olives
  • ¼ cup Grated Parmesan Cheese
  • 2 cloves Garlic minced
  • ¼ cup Olive Oil
  • 2 slices Tomato
  • 4 slices Fresh Mozzarella
  • to taste Salt and Pepper

Instructions 

  1. 1. In a food processor, combine basil, olives, Parmesan, garlic, and olive oil. Blend until smooth to make the olive pesto.
  2. 2. Spread the olive pesto on one side of each slice of bread.
  3. 3. Layer tomato slices and mozzarella on two of the bread slices. Season with salt and pepper.
  4. 4. Top with the remaining bread slices, pesto side down.
  5. 5. Heat a pan over medium heat. Grill the sandwiches for about 2-3 minutes on each side, until the bread is golden and the cheese is melted.
