Ingredients

  • 4 cups day-old bread, cubed
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella, cubed
  • 1 cup basil leaves, torn
  • ¼ cup extra-virgin olive oil
  • 2 tablespoon balsamic vinegar
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Spread the cubed bread on a baking sheet and toast in the oven for about 10 minutes, or until golden and crispy.
  3. In a large mixing bowl, combine the toasted bread, cherry tomatoes, mozzarella, and basil.
  4. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper to taste. Toss everything together until well combined.
  5. Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
