Instructions
Preheat oven to 400°F (200°C).
Season chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Sear chicken breasts until golden brown, about 2-3 minutes per side.
Transfer chicken to a baking dish. Top with cherry tomatoes, balsamic vinegar, and garlic powder.
Bake in preheated oven for 15-20 minutes, or until chicken is cooked through.
Remove from oven, top with mozzarella slices, and return to oven for 2-3 minutes, or until cheese is melted.
Garnish with fresh basil leaves before serving.
