Ingredients

  • 4 boneless, skinless chicken breasts
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • 2 cups cherry tomatoes, halved
  • ¼ cup balsamic vinegar
  • 1 teaspoon garlic powder
  • 8 ounces fresh mozzarella, sliced
  • Fresh basil leaves

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken breasts until golden brown, about 2-3 minutes per side.
  4. Transfer chicken to a baking dish. Top with cherry tomatoes, balsamic vinegar, and garlic powder.
  5. Bake in preheated oven for 15-20 minutes, or until chicken is cooked through.
  6. Remove from oven, top with mozzarella slices, and return to oven for 2-3 minutes, or until cheese is melted.
  7. Garnish with fresh basil leaves before serving.
