- 12 oz Capellini pasta
- 2 tablespoon Olive oil
- 4 cloves Garlic, minced
- 1.5 lb Fresh tomatoes, chopped
- 1 cup Fresh basil, chopped
- To taste Salt and pepper
- ¼ cup Grated Parmesan cheese optional
1. Cook the capellini pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
3. Add the chopped tomatoes to the skillet and cook until they start to break down, about 5-7 minutes.
4. Stir in the chopped basil and season with salt and pepper to taste.
5. Add the cooked capellini pasta to the skillet and toss to combine with the tomato mixture.
6. Serve immediately, topped with grated Parmesan cheese if desired.
