Ingredients 

Main Ingredients

  • 2 lbs Beef shank cut into chunks
  • 1 whole Onion quartered
  • 3 cloves Garlic minced
  • 4 cups Beef broth
  • 2 whole Carrots cut into chunks
  • 2 whole Potatoes cut into chunks
  • 2 ears Corn cut into pieces
  • 1 whole Zucchini cut into chunks
  • 1 bunch Cilantro chopped
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. In a large pot, add the beef shank, onion, garlic, and beef broth. Bring to a boil, then reduce heat and simmer for about 1 hour or until the beef is tender.
  2. 2. Add the carrots, potatoes, and corn to the pot. Continue to simmer for another 30 minutes.
  3. 3. Add the zucchini and cilantro. Season with salt and pepper to taste. Simmer for an additional 10-15 minutes, or until all vegetables are tender.
  4. 4. Serve hot with a side of lime wedges and warm tortillas, if desired.
