Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add diced onion, bell pepper, and garlic. Sauté until softened.
3. Stir in the rice and cook for 2 minutes.
4. Add chicken broth, diced tomatoes, Cajun seasoning, salt, and pepper. Bring to a boil.
5. Reduce heat, cover, and simmer for 15 minutes.
6. Add shrimp and cook until pink and opaque, about 5 minutes.
7. Fluff the rice with a fork and serve hot.
