Ingredients

  • 200 g Spaghetti
  • 1 cup Pecorino Romano cheese, finely grated
  • 2 teaspoon Black pepper, freshly ground
  • 1 tablespoon Salt for pasta water

Instructions 

  1. 1. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente.
  2. 2. Meanwhile, heat a skillet over medium heat. Add freshly ground black pepper and toast for about 1 minute.
  3. 3. Reserve 1 cup of pasta water, then drain the spaghetti.
  4. 4. Add the hot pasta to the skillet with the toasted pepper. Gradually add the grated Pecorino Romano cheese, tossing with tongs to combine.
  5. 5. Add reserved pasta water a little at a time until a creamy sauce forms. Serve immediately.
