Ingredients 

Main Ingredients

  • 1 medium Butternut squash peeled and cubed
  • 2 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 8 small Tortillas
  • 1 cup Black beans cooked
  • 1 cup Corn cooked
  • 1 cup Avocado diced
  • 1 cup Tomato diced
  • 1 cup Red onion diced
  • 1 cup Cilantro chopped
  • 1 cup Lime wedges for serving

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss the butternut squash cubes with olive oil, chili powder, cumin, and salt.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes, until tender and slightly caramelized.
  4. Warm the tortillas in a dry skillet over medium heat.
  5. Assemble the tacos by filling each tortilla with roasted squash, black beans, corn, avocado, tomato, red onion, and cilantro.
  6. Serve with lime wedges on the side.
