Main Ingredients

  • 1 large Butternut Squash peeled and cubed
  • 1 cup Ricotta Cheese
  • 1 cup Mozzarella Cheese shredded
  • 1 cup Marinara Sauce
  • 12 pieces Jumbo Pasta Shells cooked according to package instructions
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Olive Oil

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, cook the butternut squash cubes in olive oil until tender. Mash and set aside.
  3. In a mixing bowl, combine mashed butternut squash, ricotta cheese, salt, and pepper.
  4. Stuff the cooked pasta shells with the squash mixture and place them in a baking dish.
  5. Pour marinara sauce over the shells and sprinkle with shredded mozzarella cheese.
  6. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  7. Serve hot and enjoy!
