Butternut Squash Spinach Lasagna

Main Ingredients
- 1 large butternut squash peeled and sliced
- 2 cups spinach fresh
- 9 sheets lasagna noodles cooked
- 2 cups ricotta cheese
- 2 cups mozzarella cheese shredded
- 1 cup Parmesan cheese grated
- 2 cups marinara sauce
Preheat oven to 375°F (190°C).
Layer the bottom of a baking dish with a thin layer of marinara sauce.
Place a layer of lasagna noodles over the sauce.
Spread a layer of ricotta cheese over the noodles, followed by a layer of butternut squash slices and spinach.
Sprinkle with mozzarella and Parmesan cheese.
Repeat layers until all ingredients are used, ending with a layer of cheese on top.
Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes, until cheese is golden and bubbly.
Let lasagna sit for 10 minutes before serving.
