Main Ingredients
- 1 medium Butternut Squash peeled and cubed
- 2 tablespoon Olive Oil
- 1 cup Vegetable Broth
- 1 clove Garlic minced
- 1 cup Heavy Cream
- 8 oz Pasta your choice
- 1 tablespoon Fresh Sage chopped
- to taste Salt and Pepper
1. Cook pasta according to package instructions. Drain and set aside.
2. In a large pot, heat olive oil over medium heat. Add garlic and cook until fragrant.
3. Add butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer until squash is tender.
4. Transfer squash mixture to a blender and blend until smooth. Return to pot.
5. Stir in heavy cream and sage. Season with salt and pepper. Simmer for a few more minutes.
6. Toss pasta with sauce. Serve warm.
