Ingredients 

Main Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup pomegranate seeds
  • ¼ cup feta cheese, crumbled
  • ¼ cup walnuts, toasted
  • 2 cups mixed greens
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon honey

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash cubes with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25 minutes or until tender and slightly caramelized. Let cool.
  4. In a large mixing bowl, combine roasted squash, pomegranate seeds, feta cheese, walnuts, and mixed greens.
  5. In a small bowl, whisk together balsamic vinegar and honey. Drizzle over the salad and toss to combine.
