Butternut Squash Pasta With Walnuts And Sage

Main Ingredients
- 1 butternut squash peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 oz pasta
- ½ cup walnuts toasted and chopped
- ¼ cup fresh sage leaves chopped
- ¼ cup grated Parmesan cheese
Preheat oven to 400°F (200°C).
Toss butternut squash with olive oil, salt, and pepper. Roast for 25-30 minutes until tender.
Cook pasta according to package instructions. Drain and set aside.
In a large skillet, toast walnuts over medium heat for 2-3 minutes.
Add roasted squash, cooked pasta, sage, and Parmesan to the skillet. Toss to combine.
Serve warm, garnished with extra Parmesan if desired.
