Ingredients 

Main Ingredients

  • 1 butternut squash peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 oz pasta
  • ½ cup walnuts toasted and chopped
  • ¼ cup fresh sage leaves chopped
  • ¼ cup grated Parmesan cheese

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, salt, and pepper. Roast for 25-30 minutes until tender.
  3. Cook pasta according to package instructions. Drain and set aside.
  4. In a large skillet, toast walnuts over medium heat for 2-3 minutes.
  5. Add roasted squash, cooked pasta, sage, and Parmesan to the skillet. Toss to combine.
  6. Serve warm, garnished with extra Parmesan if desired.
