  • 1 large Butternut Squash peeled and spiralized
  • 2 tablespoon Olive Oil
  • 3 cloves Garlic minced
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Parmesan Cheese grated
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat olive oil in a large skillet over medium heat.
  2. 2. Add minced garlic and cook until fragrant, about 1 minute.
  3. 3. Add spiralized butternut squash noodles and cook for 5-7 minutes until tender.
  4. 4. Add cherry tomatoes and cook for another 2-3 minutes.
  5. 5. Season with salt and pepper to taste.
  6. 6. Serve topped with grated Parmesan cheese.
