Ingredients 

Main Ingredients

  • 2 cups butternut squash, peeled and cubed
  • 8 oz elbow macaroni
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tablespoon butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Cook the macaroni according to the package instructions. Drain and set aside.
  3. 3. In a saucepan, bring the butternut squash and milk to a boil. Reduce heat and simmer until the squash is tender, about 10-15 minutes.
  4. 4. Transfer the squash mixture to a blender and blend until smooth.
  5. 5. Return the blended mixture to the saucepan. Stir in the cheddar cheese, Parmesan cheese, butter, salt, and pepper until the cheese is melted and the sauce is smooth.
  6. 6. Combine the cheese sauce with the cooked macaroni. Transfer to a baking dish.
  7. 7. Bake in the preheated oven for 15-20 minutes, until bubbly and golden on top.
