- 1 large Butternut Squash peeled and sliced
- 9 sheets Lasagna Noodles no-boil
- 2 cups Ricotta Cheese
- 2 cups Mozzarella Cheese shredded
- 1 cup Parmesan Cheese grated
- 2 cups Marinara Sauce
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Preheat oven to 375°F (190°C).
In a large saucepan, heat olive oil over medium heat. Add butternut squash slices and cook until tender, about 10 minutes.
In a baking dish, spread a thin layer of marinara sauce. Place a layer of lasagna noodles on top.
Spread a layer of ricotta cheese over the noodles, followed by a layer of cooked butternut squash, mozzarella cheese, and a sprinkle of Parmesan cheese. Repeat layers until all ingredients are used, ending with a layer of cheese on top.
Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
Let lasagna cool for 10 minutes before serving.
