Ingredients 

Main Ingredients

  • 1 medium Butternut squash peeled and cubed
  • 2 cups Kale chopped
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 8 small Tortillas
  • to taste Salt and pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, cumin, paprika, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25-30 minutes, until tender and slightly caramelized.
  4. While squash is roasting, sauté kale in a skillet with a bit of olive oil until wilted, about 5 minutes.
  5. Warm tortillas in a dry skillet or in the oven wrapped in foil.
  6. Assemble tacos with roasted squash and sautéed kale. Serve immediately.
