Main Ingredients
- 1 large butternut squash, peeled and cubed
- 4 cups kale, chopped
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup breadcrumbs
- 2 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the butternut squash, kale, onion, garlic, olive oil, salt, and pepper. Mix well.
Transfer the mixture to a baking dish and pour the vegetable broth over it.
Sprinkle the breadcrumbs evenly over the top.
Bake in the preheated oven for 40 minutes, or until the squash is tender and the top is golden brown.
Remove from the oven and let it cool for a few minutes before serving.
