Ingredients

  • 1 medium butternut squash peeled and cubed
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 large flour tortillas
  • 4 oz goat cheese crumbled
  • ¼ cup fresh cilantro chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. Heat a skillet over medium heat. Place a tortilla in the skillet, sprinkle with goat cheese, roasted squash, and cilantro. Top with another tortilla.
  4. Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden and cheese is melted. Repeat with remaining tortillas.
  5. Cut into wedges and serve warm.
