- 2 cups Butternut Squash, cooked and mashed
- 1 cup Breadcrumbs
- ½ cup Parmesan Cheese, grated
- 1 Egg beaten
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- 2 tablespoon Olive Oil for frying
1. Preheat your oven to 400°F (200°C).
2. In a mixing bowl, combine the mashed butternut squash, breadcrumbs, Parmesan cheese, beaten egg, salt, and black pepper. Mix well.
3. Shape the mixture into small croquettes, about the size of a golf ball.
4. Heat the olive oil in a frying pan over medium heat. Fry the croquettes until golden brown on all sides, about 3-4 minutes per side.
5. Transfer the fried croquettes to a baking sheet and bake in the preheated oven for 10 minutes to ensure they are cooked through.
6. Serve hot and enjoy!
