Ingredients

  • 1 medium Butternut squash peeled and cubed
  • 1 can Coconut milk
  • 1 tablespoon Curry powder
  • 1 teaspoon Salt
  • 1 cup Vegetable broth
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 tablespoon Olive oil

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the diced onion and cook until translucent, about 5 minutes.
  3. 3. Stir in the minced garlic and curry powder, cooking for another minute.
  4. 4. Add the cubed butternut squash, coconut milk, vegetable broth, and salt. Bring to a boil.
  5. 5. Reduce heat and simmer until the squash is tender, about 20 minutes.
  6. 6. Serve hot, garnished with fresh cilantro if desired.
