Butternut Squash Breakfast Hash
A hearty and nutritious breakfast hash made with butternut squash, veggies, and eggs.

Main Ingredients
- 1 medium butternut squash peeled and diced
- 1 small onion diced
- 1 medium red bell pepper diced
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 eggs
- Fresh parsley chopped (optional)
Preheat oven to 400°F (200°C).
Toss butternut squash, onion, bell pepper, and garlic with olive oil, paprika, salt, and pepper.
Spread mixture on a baking sheet and roast for 20-25 minutes, until tender.
In the last 5 minutes, make 4 wells in the mixture and crack an egg into each well.
Return to oven and bake until eggs are set, about 5 minutes.
Garnish with fresh parsley if desired.
