Ingredients 

Main Ingredients

  • 1 medium butternut squash peeled and diced
  • 1 small onion diced
  • 1 medium red bell pepper diced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 eggs
  • Fresh parsley chopped (optional)

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash, onion, bell pepper, and garlic with olive oil, paprika, salt, and pepper.
  3. Spread mixture on a baking sheet and roast for 20-25 minutes, until tender.
  4. In the last 5 minutes, make 4 wells in the mixture and crack an egg into each well.
  5. Return to oven and bake until eggs are set, about 5 minutes.
  6. Garnish with fresh parsley if desired.
