Ingredients 

Main Ingredients

  • 1 medium Butternut Squash peeled and cubed
  • 1 can Black Beans drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 8 small Tortillas
  • 1 cup Salsa
  • 1 cup Avocado diced
  • 0.5 cup Cilantro chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, cumin, and chili powder. Spread on a baking sheet.
  3. Roast for 25-30 minutes, until tender and slightly caramelized.
  4. Warm tortillas in a dry skillet over medium heat.
  5. Assemble tacos with roasted squash, black beans, salsa, avocado, and cilantro.
