Butternut Squash Black Bean Chili Recipe

Main Ingredients
- 1 medium Butternut Squash peeled and cubed
- 1 can Black Beans drained and rinsed
- 1 can Diced Tomatoes with juice
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 tablespoon Olive Oil
- 2 cups Vegetable Broth
- 1 teaspoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Add minced garlic and cook for another minute.
4. Add cubed butternut squash, black beans, diced tomatoes, vegetable broth, chili powder, cumin, salt, and black pepper. Stir to combine.
5. Bring to a boil, then reduce heat and simmer for 30-35 minutes, until the butternut squash is tender.
6. Serve hot and enjoy!
