Ingredients 

Main Ingredients

  • 1 large Butternut Squash peeled, seeded, and cubed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Heavy Cream
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until soft.
  2. 2. Add the butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer until squash is tender, about 30 minutes.
  3. 3. Use a blender to puree the soup until smooth.
  4. 4. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper. Heat through before serving.
