Main Ingredients
- 1 large Butternut Squash peeled, seeded, and cubed
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 4 cups Vegetable Broth
- 1 cup Heavy Cream
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
1. In a large pot, sauté the onion and garlic until soft.
2. Add the butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer until squash is tender, about 30 minutes.
3. Use a blender to puree the soup until smooth.
4. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper. Heat through before serving.
