Ingredients 

Main Ingredients

  • 1 large Butternut Squash peeled, seeded, and cubed
  • 2 medium Apples peeled, cored, and chopped
  • 1 medium Onion chopped
  • 3 cups Vegetable Broth
  • 1 cup Water
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper or to taste
  • ½ teaspoon Ground Nutmeg

Instructions 

  1. 1. In a large pot, sauté the chopped onion until translucent.
  2. 2. Add the cubed butternut squash and chopped apples to the pot.
  3. 3. Pour in the vegetable broth and water. Bring to a boil.
  4. 4. Reduce heat and let it simmer for about 20-25 minutes, until the squash and apples are tender.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Season with salt, pepper, and nutmeg. Adjust to taste.
  7. 7. Serve hot and enjoy!
