  • 1 medium Butternut Squash peeled and sliced
  • 1 medium Apple sliced
  • ½ cup Dried Cranberries
  • 8 slices Whole Grain Bread toasted
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Toss the butternut squash slices with olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. 3. Roast the squash in the oven for 25-30 minutes, until tender and slightly caramelized.
  4. 4. In a mixing bowl, combine the roasted squash, apple slices, and dried cranberries.
  5. 5. Assemble the sandwiches by placing the squash, apple, and cranberry mixture between two slices of toasted whole grain bread.
  6. 6. Serve immediately and enjoy!
