Butternut Squash And Tart Cherry Quinoa Recipe

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups butternut squash peeled and cubed
- ½ cup dried tart cherries
- 2 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Preheat your oven to 400°F (200°C).
Toss the butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
While the squash is roasting, cook the quinoa. In a saucepan, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
In a large mixing bowl, combine the cooked quinoa, roasted butternut squash, and dried tart cherries. Drizzle with the remaining olive oil and toss to combine.
Serve warm or at room temperature.
