Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups butternut squash peeled and cubed
  • ½ cup dried tart cherries
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. While the squash is roasting, cook the quinoa. In a saucepan, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  4. In a large mixing bowl, combine the cooked quinoa, roasted butternut squash, and dried tart cherries. Drizzle with the remaining olive oil and toss to combine.
  5. Serve warm or at room temperature.
