Ingredients 

Main Ingredients

  • 1 cup Orzo
  • 2 cups Butternut Squash peeled and diced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Grated Parmesan Cheese
  • 1 tablespoon Chopped Fresh Sage
  • 2 cups Vegetable Broth

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread it out on a baking sheet and roast for 20-25 minutes until tender and caramelized.
  3. While the squash is roasting, cook the orzo according to the package instructions. Drain and set aside.
  4. In a large skillet, heat the remaining olive oil over medium heat. Add the chopped sage and cook for 1-2 minutes until fragrant.
  5. Add the cooked orzo and roasted butternut squash to the skillet. Pour in the vegetable broth and stir to combine. Cook for 5 minutes until the broth is mostly absorbed.
  6. Stir in the grated Parmesan cheese. Serve warm.
