Ingredients

  • 1 medium butternut squash peeled and cubed
  • 2 cups all-purpose flour
  • 1 cup ricotta cheese
  • 1 large egg lightly beaten
  • ½ cup grated Parmesan cheese
  • 1 teaspoon salt
  • ¼ teaspoon nutmeg freshly grated
  • 2 tablespoon butter
  • 8 leaves sage fresh

Instructions 

  1. 1. Preheat oven to 400°F (200°C). Roast the butternut squash cubes until tender, about 25 minutes.
  2. 2. Mash the roasted squash in a mixing bowl. Add flour, ricotta, egg, Parmesan, salt, and nutmeg. Mix until a dough forms.
  3. 3. Roll the dough into ropes and cut into 1-inch pieces to form gnocchi.
  4. 4. Boil a pot of salted water. Cook the gnocchi until they float, about 2-3 minutes. Drain.
  5. 5. In a pan, melt butter and add sage leaves. Cook until butter is browned and sage is crispy.
  6. 6. Toss the gnocchi in the sage butter. Serve warm.
