Butternut Hummus With Feta & Pomegranates Recipe

Main Ingredients
- 1 medium butternut squash, peeled and cubed
- 2 tablespoon olive oil
- 1 can chickpeas, drained and rinsed
- 2 tablespoon tahini
- 1 clove garlic, minced
- 1 Juice of 1 lemon
- Salt to taste
- ¼ cup crumbled feta cheese
- ¼ cup pomegranate seeds
Preheat oven to 400°F (200°C).
Toss butternut squash with olive oil and spread on a baking sheet. Roast for 25-30 minutes until tender.
In a food processor, combine roasted squash, chickpeas, tahini, garlic, lemon juice, and salt. Blend until smooth.
Transfer to a serving bowl and top with crumbled feta and pomegranate seeds.
