Ingredients 

Main Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoon olive oil
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoon tahini
  • 1 clove garlic, minced
  • 1 Juice of 1 lemon
  • Salt to taste
  • ¼ cup crumbled feta cheese
  • ¼ cup pomegranate seeds

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with olive oil and spread on a baking sheet. Roast for 25-30 minutes until tender.
  3. In a food processor, combine roasted squash, chickpeas, tahini, garlic, lemon juice, and salt. Blend until smooth.
  4. Transfer to a serving bowl and top with crumbled feta and pomegranate seeds.
