Buffalo Cauliflower Mac & Cheese
A spicy twist on classic mac and cheese, featuring buffalo cauliflower.

- 1 head Cauliflower cut into florets
- 2 cups Macaroni
- ½ cup Buffalo Sauce
- 2 cups Cheddar Cheese shredded
- 1 cup Milk
- 2 tablespoon Butter
- 2 tablespoon Flour
- to taste Salt
- to taste Pepper
Preheat oven to 425°F (220°C).
Toss cauliflower florets with buffalo sauce and spread on a baking sheet. Roast for 20 minutes.
Cook macaroni according to package instructions. Drain and set aside.
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
Gradually whisk in milk and cook until thickened. Stir in cheddar cheese until melted.
Combine macaroni, roasted cauliflower, and cheese sauce in a mixing bowl. Season with salt and pepper to taste.
Serve hot.
