  • 1 lb Brussels sprouts trimmed and halved
  • 1 cup Farro uncooked
  • 1 cup Pomegranate seeds
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper freshly ground

Instructions 

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Toss the Brussels sprouts with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. 3. Roast the Brussels sprouts for 20-25 minutes, until they are golden brown and crispy.
  4. 4. While the Brussels sprouts are roasting, cook the farro according to package instructions.
  5. 5. In a large mixing bowl, combine the cooked farro, roasted Brussels sprouts, and pomegranate seeds. Drizzle with the remaining olive oil and toss to combine.
  6. 6. Serve warm or at room temperature.
