Main Ingredients
- 1 lb Brussels sprouts trimmed and halved
- 0.5 lb sunchokes scrubbed and thinly sliced
- 0.25 cup olive oil
- 2 tablespoon lemon juice
- 1 clove garlic minced
- to taste Salt and pepper
- 0.25 cup grated Parmesan cheese
Preheat your oven to 400°F (200°C).
Toss Brussels sprouts and sunchokes with olive oil, salt, and pepper.
Spread on a baking sheet and roast for 10 minutes, or until tender.
In a small bowl, whisk together lemon juice, garlic, and a pinch of salt.
Combine roasted vegetables with dressing and Parmesan cheese.
Serve warm or at room temperature.
