  • 1 lb Brussels sprouts trimmed and halved
  • 0.5 lb sunchokes scrubbed and thinly sliced
  • 0.25 cup olive oil
  • 2 tablespoon lemon juice
  • 1 clove garlic minced
  • to taste Salt and pepper
  • 0.25 cup grated Parmesan cheese

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss Brussels sprouts and sunchokes with olive oil, salt, and pepper.
  3. Spread on a baking sheet and roast for 10 minutes, or until tender.
  4. In a small bowl, whisk together lemon juice, garlic, and a pinch of salt.
  5. Combine roasted vegetables with dressing and Parmesan cheese.
  6. Serve warm or at room temperature.
