Ingredients

  • 1 cup Brown rice uncooked
  • 2 cups Water
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red onion finely chopped
  • ¼ cup Feta cheese crumbled
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper freshly ground

Instructions 

  1. 1. Cook the brown rice according to package instructions. Let it cool.
  2. 2. In a large mixing bowl, combine the cooked rice, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
