Ingredients

  • 1 cup quinoa rinsed
  • 2 cups broccoli florets chopped
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • ¼ cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Cook the quinoa according to package instructions. Let it cool.
  2. 2. Steam the broccoli florets until tender, about 5 minutes. Let them cool.
  3. 3. In a large mixing bowl, combine the cooked quinoa, steamed broccoli, cherry tomatoes, red onion, and feta cheese.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
