Ingredients

  • 2 cups broccoli florets
  • ½ cup parmesan cheese, grated
  • ¼ cup pine nuts toasted
  • 2 cloves garlic
  • ½ cup olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt and pepper

Instructions 

  1. 1. Blanch the broccoli florets in boiling water for 2-3 minutes until tender but still bright green. Drain and cool.
  2. 2. In a blender, combine the broccoli, parmesan cheese, toasted pine nuts, garlic, and lemon juice.
  3. 3. With the blender running, slowly add the olive oil until the mixture is smooth and creamy.
  4. 4. Season with salt and pepper to taste.
  5. 5. Serve over pasta, as a dip, or spread on sandwiches.
