Ingredients 

Main Ingredients

  • 2 cups Broccoli florets
  • 1 cup Basil leaves
  • ½ cup Parmesan cheese, grated
  • ¼ cup Pine nuts
  • 2 cloves Garlic minced
  • ½ cup Olive oil
  • 1 lb Mushrooms cleaned and stems removed
  • to taste Salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a blender, combine broccoli, basil, Parmesan, pine nuts, garlic, and olive oil. Blend until smooth.
  3. Season the pesto with salt and pepper to taste.
  4. Place mushrooms on a baking sheet and fill each with a spoonful of broccoli pesto.
  5. Bake for 15 minutes or until mushrooms are tender.
  6. Serve warm and enjoy!
