Broccoli Pesto Mac & Cheese

Ingredients 

Main Ingredients

  • 2 cups macaroni
  • 1 cup broccoli florets
  • 1 cup basil leaves
  • ½ cup parmesan cheese, grated
  • ¼ cup pine nuts
  • 2 cloves garlic
  • ½ cup olive oil
  • 1 cup milk
  • 1 cup cheddar cheese, shredded
  • to taste salt and pepper

Instructions 

  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. Steam the broccoli florets until tender. Let cool slightly.
  3. In a blender, combine the steamed broccoli, basil leaves, parmesan cheese, pine nuts, garlic, and olive oil. Blend until smooth to make the pesto.
  4. In a pot, heat the milk over medium heat. Stir in the cheddar cheese until melted and smooth.
  5. Add the cooked macaroni and broccoli pesto to the pot. Stir until well combined. Season with salt and pepper to taste.
  6. Transfer the mixture to a baking dish and bake at 350°F (175°C) for 10-15 minutes, until bubbly and golden on top.
  7. Serve hot and enjoy!
