Ingredients 

Main Ingredients

  • 2 cups Broccoli florets
  • 2 cups Pasta (any short pasta)
  • 1 cup Cherry tomatoes, halved
  • ¼ cup Red onion, finely chopped
  • ½ cup Feta cheese, crumbled
  • ¼ cup Olive oil
  • 2 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic, minced
  • to taste Salt and pepper

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and set aside.
  2. 2. Blanch the broccoli florets in boiling water for 2-3 minutes until tender-crisp. Drain and rinse under cold water.
  3. 3. In a large mixing bowl, combine the cooked pasta, broccoli, cherry tomatoes, red onion, and feta cheese.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
  5. 5. Pour the dressing over the pasta salad and toss to combine.
  6. 6. Chill in the refrigerator for at least 30 minutes before serving.
