Broccoli Cheddar Potatoes

Ingredients

  • 4 large russet potatoes
  • 2 cups broccoli florets chopped
  • 1 cup cheddar cheese shredded
  • 0.5 cup sour cream
  • 2 tablespoon butter
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes. Pierce each potato several times with a fork.
  3. Place the potatoes on a baking sheet and bake for about 45-60 minutes, or until tender.
  4. While the potatoes are baking, steam the broccoli until tender.
  5. Once the potatoes are done, let them cool slightly. Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a small border of potato intact.
  6. In the mixing bowl, combine the potato insides, steamed broccoli, cheddar cheese, sour cream, butter, salt, and pepper. Mix well.
  7. Spoon the mixture back into the potato skins. Place the stuffed potatoes back on the baking sheet.
  8. Bake for an additional 10-15 minutes, or until the tops are golden and the filling is heated through.
