  • 4 large eggs
  • 2 cups diced potatoes
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 1 cup shredded cheese
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced potatoes and cook until they start to soften, about 10 minutes.
  3. Add the chopped bell peppers and onions, and cook until they are tender, about 5 minutes.
  4. Make four wells in the mixture and crack an egg into each well.
  5. Cover the skillet and cook until the eggs are set, about 5 minutes.
  6. Sprinkle with shredded cheese and season with salt and pepper to taste.
