Main Ingredients
- 4 cups bread, cubed day-old or toasted
- 2 tomatoes, diced
- 1 cucumber, diced
- ¼ cup red onion, thinly sliced
- 2 eggs, fried or poached
- ¼ cup olive oil
- 2 tablespoon red wine vinegar
- to taste salt and pepper
1. Toast the bread cubes in a skillet until golden brown.
2. In a mixing bowl, combine tomatoes, cucumber, and red onion.
3. Add the toasted bread cubes to the bowl.
4. Drizzle with olive oil and red wine vinegar. Toss to combine.
5. Season with salt and pepper to taste.
6. Top with fried or poached eggs. Serve immediately.
