Ingredients

  • 3 lbs oxtails
  • 2 cups red wine
  • 2 cups beef broth
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoon tomato paste
  • 1 teaspoon thyme
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. 1. Preheat your oven to 325°F (163°C).
  2. 2. Season the oxtails with salt and pepper.
  3. 3. Heat olive oil in a Dutch oven over medium-high heat. Brown the oxtails on all sides, then remove and set aside.
  4. 4. In the same pot, add the chopped onion and garlic. Cook until softened.
  5. 5. Stir in the tomato paste and cook for another minute.
  6. 6. Pour in the red wine, beef broth, and add thyme. Bring to a simmer.
  7. 7. Return the oxtails to the pot. Cover and transfer to the oven. Braise for about 3 hours, or until the meat is tender.
  8. 8. Remove the oxtails from the pot. Skim off any excess fat from the sauce. Serve the oxtails with the sauce poured over.
