- 1 lb Boudin sausage casing removed
- 1 cup Breadcrumbs
- 2 Eggs beaten
- 1 cup Flour
- 1 cup Vegetable oil for frying
1. Preheat oil in a frying pan over medium heat.
2. In a mixing bowl, combine boudin sausage and breadcrumbs.
3. Form the mixture into balls.
4. Dredge each ball in flour, dip in beaten eggs, and coat with breadcrumbs.
5. Fry the balls in hot oil until golden brown, about 3-4 minutes.
6. Drain on paper towels and serve hot.
