Bordelaise Sauce with Mushrooms

Main Ingredients
- 1 cup Red Wine preferably Bordeaux
- 1 cup Beef Stock
- 1 tablespoon Butter
- 1 tablespoon Olive Oil
- 1 cup Mushrooms sliced
- 2 cloves Garlic minced
- 1 teaspoon Thyme fresh, chopped
- to taste Salt
- to taste Black Pepper freshly ground
Heat the olive oil and butter in a saucepan over medium heat.
Add the mushrooms and cook until they release their moisture and start to brown.
Add the garlic and thyme, cook for another minute.
Pour in the red wine and bring to a boil. Reduce the heat and simmer until the wine is reduced by half.
Add the beef stock and continue to simmer until the sauce is thickened.
Season with salt and pepper to taste. Serve warm.
