Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup sugar
  • 1 pinch salt
  • 1 large egg yolk

Filling

  • 1 cup sugar
  • 3 large eggs
  • ½ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • ½ cup heavy cream
  • 1 cup fresh blueberries

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add egg yolk and mix until dough forms.
  3. Press the dough into a tart pan. Bake for 15 minutes or until lightly golden. Let cool.
  4. In another bowl, whisk together sugar, eggs, lemon juice, and lemon zest. Stir in heavy cream.
  5. Pour the filling into the cooled crust. Bake for 15 minutes or until the filling is set.
  6. Top with fresh blueberries. Chill before serving.
