Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup fresh blueberries
  • 1 zest of 1 lemon

Instructions 

  1. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk buttermilk, egg, and melted butter.
  3. Combine wet and dry ingredients. Stir in blueberries and lemon zest.
  4. Heat a griddle over medium heat. Pour ¼ cup batter for each pancake.
  5. Cook until bubbles form, then flip and cook until golden brown.
