Pancake Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1 cup fresh blueberries
- 1 zest of 1 lemon
In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk buttermilk, egg, and melted butter.
Combine wet and dry ingredients. Stir in blueberries and lemon zest.
Heat a griddle over medium heat. Pour ¼ cup batter for each pancake.
Cook until bubbles form, then flip and cook until golden brown.
